Food Friday: Disaster Dining with Nat and Marie

*Every Friday is all about food on Red Cross Talks – everything from Red Cross inspired recipes to emergency food tips and solutions

This past Wednesday, I appeared on behalf of the Canadian Red Cross on Nat and Marie – an online talk show based in Toronto – to talk all about emergency preparedness and one of my passions: food.

During the show, I took part in a disaster dining challenge in which my formidable opponent Patrick (assisted by his sous-chef Logan) and I each prepared a dish using non-perishable food found in an emergency kit and no electricity. At the end of the hour, the dishes were sampled by Nat, Marie, and two other guests on their show: Justin Kozuch and the CBC’s George Stroumboulopoulos.

If you missed the show, you can watch it here. These are the recipes that Patrick and I made!

Peanut Butter Balls courtesy of Get Prepared

1/4 cup honey

1⁄3 cup peanut butter (or other nut butter)

1/2 cup powdered milk

1⁄3 cup coconut (optional)

Mix ingredients together. Shape into balls and enjoy! Nice and sweet but also nutritious. You can substitute some of the powdered milk with protein powder. This recipe can easily be doubled if you are feeding a crowd.

*I changed this recipe up by rolling the balls in the coconut. I also added cocoa powder to the mix to create chocolate peanut butter balls. Delish!

Spicy Tuna with Chick Peas winner of Red Cross golden spoon award

1 can of tuna drained

1 can of chickpeas drained

½ jar of salsa

Black pepper, cayenne pepper, parsley and salt to taste

Mix all the ingredients in a bowl and enjoy! You can put this in a hard taco shell to add some crunch.
