Food Friday – Cookies for a cause

*Every Friday is all about food on Red Cross Talks – everything from Red Cross inspired recipes to emergency food tips and solutions.

Everybody loves cookies. So when Elaine Sponagle and four of her friends from Pictou county in Nova Scotia heard about the Japan earthquake and tsunami this spring, they started baking batches of cookies to raise money for Red Cross relief efforts.

In all, they baked 935 dozen Scotch cookies for a total of 11,220 cookies. The other impressive number: they raised a total of $7,221!

But the generosity doesn’t end there. Elaine agreed to share her recipe so we can all enjoy her cookies.

Elaine’s Fundraiser Scotch Cookies

Cream 4 squares of margarine in mixer.

Add 3 cups of flour all at once. Stir on low until combined.

Put 1 cup of flour mixed with 1 cup of icing sugar on counter and work in the dough.

Roll ¼” to ½” thick. Cut and place on ungreased cookie sheets fairly close together.

Bake at 350°F for 14 minutes. Cool and ice.

 Elaine’s Fundraiser Icing for Scotch Cookies

½ cup margarine

½ cup shortening

(or 1 cup margarine)

4 cups icing sugar

1 tsp vanilla

2 tbsp milk

Cream margarine in mixer. Add icing sugar, vanilla and milk. Add food coloring.

With flower tip, pipe onto Scotch cookies.

Can be doubled for large batch of cookies.
