Food Friday: What do Red Crossers make during the holidays?

As food lovers, the team at Red Cross Talks have been busy planning our menus for the holidays. We were curious what our fellow Red Crossers would be whipping up in their kitchens, so we asked them. Here’s what we found out!

It appears that there is more than one Red Crosser with a sweet tooth. Joan Savoie, from Ontario Zone injury prevention, enjoys making candy orange peels. Alison Frehlich, from National Office public affairs, enjoys baking cookies (lots of them!).  And for Heather Cranney, district branch manger in Timmins, it’s all about the peanut brittle.

Len Murphy’s, president of the Woodstock and Stratford branches, most favourite holiday recipe is a morning starter entitled “Santa Breakfast”. Here’s the recipe:

Santa Breakfast

 Ingredients:   

  •  6 eggs
  •  2 cups milk
  •  12 slices of bread
  •  1 cup diced red and green pepper
  •  6 slices of cooked ham
  •  2 cups of grated cheese
  •  3 cups of corn flakes

Directions

  1. Assemble in lasagne pan or casserole dish
  2. Place 6 slices of bread on the bottom of dish
  3. Place a slice of ham on top and sprinkle half of the grated cheese
  4. Put the rest of the bread on top as it looks like a sandwich
  5. Sprinkle the remainder of cheese on top
  6. Put your red and green diced peppers on top
  7. Mix up the eggs and milk put in salt and pepper to taste
  8. Now pour mixture over the casserole should cover everything
  9. Now plastic wrap the dish and put in refrigerator over night
  10. When everyone wakes up the next day unwrap the dish
  11. Sprinkle on the corn flakes
  12. Place in the oven at 350 for 25 min
  13. let stand for 15 min to firm up before cutting
